This is the season: ordering fresh vegetable soup in the shop or jumping into a soup bar for a steaming bowl, who can resist it? But preparing a healthy vegetable soup all by yourself is also an excellent way to spend the weekend in autumn weather.
Use olive oil instead of butter to fry the onions. Go for garlic or ginger as a powerful basis: both are souper healthy, and with the right attributes, every soup automatically becomes a delight: some fresh herbs (coriander or basil, depending on your personal taste and the intended palate of flavours of your soup). And do you prefer hummus, tzatziki or baba ganoush? Soup and mezze always go well together anyway, in a gazpacho too. But that is - unfortunately - another season.
If you use "to soup" as a verb, make it one that requires no effort: feel the urge to snack, remember that you can also.... soup.
